Healthy Soups for the Monsoon

Hot and hearty Vegetable Soup - Saute 8 medium carrots - sliced, 2 large onions - chopped, 4 celery ribs and 1 large green pepper - seeded and chopped in 1 tbsp olive oil until crisp-tender. Add 1 garlic clove, minced; cook 1 minute longer. Stir in 4 cups of water : 1 can diced tomatoes, 2 cups vegetable juice, 2 cups chopped cabbage, 2 cups frozen peas, 1 an chickpeas, 1-1/2 tsp dried parsley flakes, 1 tsp salt, 1 tsp dried marjoram, 1 tsp dried thyme, 1 bay leaf, 1.2 tsp dried basil, ¼ tsp pepper. Bring to a boil. Reduce heat; cover and simmer for 1 to 1-1/2 hours or until vegetables are tender.
