Sugar-free Vanilla Almond Jelly Recipe with Fruits
One way to cool off this summer is with a bowl of delicious, melt-in-your-mouth vanilla almond jelly. Almond jelly is available in every Chinese restaurant in China and Nava K. from Malaysia adds an interesting twist on this dessert without sugar.
- 25g ( approx. 1 oz ) agar-agar/gelatin strips soaked in water for approx ½ hour and drained
- 30g ( approx. 1.5 oz ) almond powder
- 2 cups milk
- 1 teaspoon vanilla essence
- 1 teaspoon stevia liquid
Boil agar-agar strips in 1½ cup water until dissolved.
Drain and into the liquid add almond powder, milk, plus the vanilla essence and the stevia liquid.
Very quickly whisk it all together for a smooth consistency.
Pour into a medium size flat pan.
Cool and let it set by placing it in the fridge.
Once chilled, cut the jelly into squares and add fruits to your bowl or serving glass.
