How true is the claim that coffee depletes water from our bodies?

Yes, the caffeine in coffee is a diuretic, and thus can make you expel more water. However for that you will really have to drink lots and lots of coffee, and even then it’s not going to make you totally dehydrated if you drink enough water in the first place.
