Vegetarian Salad: Quinoa-Cottage Cheese Salad Recipe
Lose weight and still have high energy levels with this salad recipe. Nutritionist, Neelanjana Singh from Heinz Nutri Life Clinic, Delhi shares one such recipe with us. This quinoa-cottage cheese salad is loaded with nutrients, energy and promises to help you lose weight.
- 1/2 cup quinoa seeds
- 1 cup water
- 150 gms cottage cheese
- 2 to 3 tsp lemon juice
- 1 tsp garlic (minced)
- 2 tsp olive oil
- 100 gms tomatoes (diced)
- 2 tsp mint and parsley leaves
- salt and pepper to taste
Place 1/2 a cup of quinoa seeds in a sieve and rinse thoroughly under running water.
Take 1 cup water in a saucepan. To the water add ¼ teaspoon salt and place on the stove for boiling.
Once the water starts boiling add the quinoa seeds and allow to cook for 10 minutes.
Drain the excess water from the boiled quinoa and allow the seeds to cool.
Take 150 gms of cottage cheese and cut it into cubes.
Mix the cottage cheese cubes with the quinoa and toss gently.
Mix together lemon juice about 2 to 3 tsp, minced garlic 1 tsp, olive oil 2 tsp, diced tomatoes 100g, mint and parsley leaves 2 tsp each.
Add the above mixture to cottage cheese and the quinoa preparation.
Add salt and pepper as per your taste.
Serve with cereal of your choice
