Healthy Salad Recipes: Oriental Pear Salad
Pears fight cancer, lower cholesterol, give you instant energy and are an excellent source of fibre. So if you are bored of eating them raw, try tossing them in a salad! Distinctly oriental in flavour and appearance, this crisp and crunchy salad with pears is tasty and interesting. We also have a choice of two different dressings to toss in, just before serving it.
- 1-3/4 ounces (about 1/4 pkg.) uncooked rice sticks (Maifun)
- 1/4 cup vegetable oil
- 1 quart shredded iceberg lettuce
- 1 fresh pear, cored and sliced
- 1 cup cooked shredded chicken
- 1/2 cup each diagonally sliced green onion and sliced green pepper
- 1 tablespoon toasted sesame seeds (optional)
- Sesame Oil Dressing or Hoisin Dressing
Break rice sticks into 3- or 4-inch lengths. Heat oil to 375° to 400° F; fry rice sticks until white and fluffy. Turn once to fry pieces evenly. (Entire process takes less than 1/2 minute.) Drain on paper towels. Toss rice sticks with remaining ingredients.
Serve with choice of dressing.
Sesame Oil Dressing: Combine 1/4 cup each vinegar and sesame oil, 1 tbsp soy sauce 1 tsp each salt and sugar; mix well. Makes about 1/2 cup.
Hoisin Dressing: Combine 2 tbsp catsup, 1 tbsp each Hoisin sauce, salad oil, sugar and vinegar and 1/2 tsp salt; mix well. Makes about 1/3 cup.
Makes 4 to 6 main dish servings.
