Healthy Party Snacks: Chips and Dips

Chips and Dips are all time favourite party snacks! Everyone loves to put out a bowl of chips with some lovely exotic dips now and then. But with this simple recipe you can go a step further and make this a guilt-free indulgence for your guests! Make these homemade veggie chips instead of the unhealthy store-bought potato chips and see how your guests enjoy them. Serve them with these delicious and very easy to make dips.

Veggie Chips 

Ingredients: 1 large, ripe eggplant, 2 eggs, 2 cups cheese


Method: Cut ends from eggplant and shred in a food processor. Mix shredded eggplant with egg and cheese. Lump mixture onto a pre-greased cookie shape and smooth out to make 6 8 circles. Bake at 180 degrees C in a pre-heated oven for 12 minutes. Loosen and flip the circles. Bake on other side for a further five minutes. Once cooked, remove from oven and cut rounds into triangles with a pizza cutter. Let cool on a rack for 6-8 hours. Once dried, sprinkle with seasoning of your choice. 

And here are two quick and easy dips you can serve:

Guacamole Dip

A completely healthy dip that everyone will love, with enough of Omega 3’s to write home about. Preparation time: 5 minutes.

Plan on at least one avocado for each guest. 
Halve and peel avocados.
Mash them up in a large bowl.
Add in a few tablespoons of salsa, a teaspoon or so of salt, and juice of one lime. Stir.
What to serve with it: Veggies, veggies, and more veggies

Mango Salsa Dip

An exotic recipe that takes little or no effort:
Ingredients: A jar of salsa and fresh chopped mango.
All you need to do it mix them together in a bowl and serve with some chips.
