Grilled Bottle Gourd Recipe with Feta Cheese and Mint for Weight Loss


This recipe celebrates the humble but super-powerful summer vegetable, the bottle gourd. Easy to grow even in your potted verandah garden; bottle gourds are often considered the miracle vegetable for diabetics and weight management. Executive Chef, Anuradha Madhusudhana of Tattva Gourmet Organic Kitchen shares this healthy recipe that also improves digestion.

 

Ingredients:

2 medium-sized bottle gourds


For the Marinade:

1 tbsp extra virgin olive oil
1 tbsp lemon juice
1⁄2 tsp grated garlic
1 tsp balsamic vinegar (if unavailable, skip and add a pinch of sugar to the marinade)
1⁄2 tsp dried mint (optional)

 

Dressing Ingredients:

1 tsp lemon zest
1 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp balsamic vinegar

 

Garnish Ingredients:

75 g feta
2 tbsp mint, chopped
2 tbsp parsley, chopped

 

Method:

Bottle gourd:

Make thick slices (about 1⁄2 cm thick).

Whisk together 1 lemon juice, balsamic, extra virgin olive oil and garlic (+ dried mint, if using).

Brush this on bottle gourd.

Marinate for half an hour, turning once or twice in between.

Heat cast iron pan. Sauté bottle gourd over medium-high heat until just tender and lightly golden.

If you have a griddle, grill on high heat for a couple of seconds just to give it that restaurant-style grill marks.


Finishing:

Remove bottle gourds from pan, place on serving dish.
Drizzle dressing over.
Sprinkle lemon zest.
Scatter crumbled feta over.
Season with salt and pepper.
Garnish with fresh mint and parsley.
