A Quick and Easy IPL Party Menu

Here is the third edition for menus that'll help you with the meal planning for your next IPL watching party. If you’ve been hesitant to invite friends over in the past, because you are worried about how your cooking will turn out, don’t worry anymore with these simple recipes. With this easy IPL party menu you can have friends over without sweating it out in the kitchen.

Appetizer – Peanut chicken recipe 
In a deep pie dish, combine:
6 Tbsp peanut butter
2 Tbsp honey
1/4 cup lemon juice
2 Tbsp olive oil
1/2 tsp ginger
2 Tbsp Worcestershire sauce
1/2 tsp salt

Whisk until combined and creamy. Add strips of chicken to marinate for at least 30 minutes. 
Bake in a foil-lined pan at 180 degrees for 20 minutes or until cooked through. Sprinkle with sesame seeds, and broil for a couple minutes until seeds are toasted.

Appetizer – Tangy broccoli recipe
Cut broccoli into florets and wash.
Meanwhile, heat 2 Tbsp olive oil and 2 Tbsp butter in a pan.
Throw the broccoli in and toss around until the broccoli is bright green. Cover the pan and steam until desired softness.
Sprinkle generously with soy sauce and lemon juice. Do not add salt – there is plenty in soy sauce!
Turn heat to low until you’re ready to eat it, and serve fresh.


Chicken ‘ Taco nachos’
Grill chicken breasts with olive oil on a pan.
Bake regular tortilla chips in an oven until crisp.
Once chicken is brown, season with taco seasoning and let it simmer for a bit.
Then all that’s left is assembling the tacos: 
1) Tortilla + chopped tomatoes
2) Add the chicken
3) Add grated cheese
4) Put the tacos in a broiler to melt the cheese

Top with a dollop of sour cream and serve.

Now for the dessert – Here is a healthy chocolate fudge recipe. Normally chocolate fudge has tons of sugar and un-necessary flour, but this one is real food. In your stand mixer, or with an electric hand mixer (whisk attachment), combine:
1/4 cup cocoa powder
2 Tablespoons honey, or however much you think you need.
2 tablespoons water
3 Tablespoons coconut cream 

At first it might seem like it’s not going to come together, but just keep mixing on high speed until everything is combined. It’ll look like a rich chocolate dough.
Scoop the dough out onto a piece of waxed paper, fold the paper over the dough, and press to form a sort of patty. Refrigerate or freeze until firm, then cut into pieces to enjoy.
This recipe made 9 small (rich) pieces.
